I love this mantra, "She Believed She Could, So She Did" I think this beautiful piece of artwork should hang right next to my bathroom mirror. That way, once the sleep has cleared from my eyes, and I put in my contacts, the first thing I see clearly in the day is this affirmation.
On that note, if you are ever in the Seattle area, I am going to highly recommend the Portage Bay Cafe for a nice brunch. Some of my favorite gals introduced it to me after a tough strength training workout with our favorite trainer, Susan.
Eight sprints up a side street with a steep incline will make a gal rather hungry.
Their menu is ever-changing, the chefs create it around what is in season locally. This time around I had the Wild Salmon Omelet. "House-smoked local wild salmon, capers, organic green onions and diced tomatoes, garnished with thin-sliced red onions and a drizzle of sour cream." Oh, and let me not forget the roasted organic potatoes that accompany it on the plate.
Hands down the best omelet I have ever tasted.
Seriously, you have to try it.
I believed I could eat this massive omelet...So I did.
