Pumpkin Smoothie

I am officially unpacking the kitchen boxes.  This foodie is back in business, OH YEA!  This move certainly tested my patience and appetite.  There is only so much I can do with two plates, an oven, and a fork.  The next time I move, there will be an emergency cooking set going into my car.

To celebrate I am making myself a little post-run smoothie fit for a perfect fall day.  Something simple and filling. 

And nothing says fall to me like pumpkin. 

The Shopping List:
  • 8 oz. canned pumpkin, chilled
  • 1 cup almond milk
  • 1/4 banana, chilled
  • 4 Tbsp. vanilla protein powder
  • 1/2 tsp vanilla extract
  • dash of nutmeg
  • dash of cinnamon
  • dash of ginger
The Method:

In a blender combine all the ingredients and puree until smooth.  Drink is best if served chilled.  An optional topping is a little bit of whipped cream and a dash of cinnamon for show. 

I love this smoothie because it is like a little slice of pumpkin pie after a long run and oh, so filling.

On a side note, I feel this video accurately reflects how I feel every time I hit the road.  I am an awkward runner, thank goodness I do not have to see myself jog -- but I apologize to all the passerby's that have to see it. 

Hey, it could be worse.

I could wear spandex.
