Watermelon Lemonade

Another summer staple in my home, and I will hold onto summer as long as I can.  Even if the weather is confused and sticking in the mid-70's right now.  It kind of makes me want to go,

"Hey Mother Nature?  I know that there is craziness to contend with out there, like earthquakes that hit near DC and all and tornado watch just north of me.  But do you think you could hold the warm weather for just a bit longer in the midwest?  Thanks!  Heart ya!"

So here I am sitting here on my porch watching the sun set and sipping on my Watermelon Lemonade -- while my electric blanket is laying over top of me.

Meanwhile, I am looking back over my rather unproductive day and wondering what I actually accomplished.  Does anyone else ever have those kinds of days?

The kind of days were you do things, but it is hard to quantify them when you think back over your day before bed.

I did make Watermelon Lemonade, so that should account for something, right?

The Shopping List:
  • 1 cup water
  • 1 cup sugar
  • 1 lb watermelon
  • 1 lemon
  • 16 oz Club Soda

    The Method:

In a small pan, bring the water up to boiling and pour in the sugar.  Stir until the sugar is entirely dissolved to create a sugar syrup.  Put this to the side to cool.

Take the watermelon and cut it into cubes, taking out any seeds, and putting the cubes into a blender.  Blend until the watermelon forms a puree.  This will make roughly 2 cups of watermelon juice.

    Finally, juice the lemon.

In a large juice container, combine the sugar syrup, watermelon juice, lemon juice, and club soda.  Mix thoroughly.  Chill and serve in a half hour, or toss in a few ice cubes and serve right away.  Garnish with a little mint to add extra flavor.
